Rustic Cocoa, Raisin, Walnut & Honey Biscuits

Ingredients
  

  • 140 g gluten-free baking flour
  • 10 g cocoa powder
  • 60 g sugar
  • 1 tbsp honey
  • 1 egg
  • 60 ml oil
  • 2 tsp vanilla sugar
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • pinch of salt
  • handful of raisins
  • handful of chopped walnuts

Method
 

  1. Preheat oven to 180°C and line a baking tray.
  2. Mix together egg, sugar, honey, oil and vanilla sugar.
  3. In another bowl mix flour, cocoa, baking powder and salt.
  4. Combine wet and dry ingredients to form a soft dough.
  5. Fold in raisins and walnuts.
  6. Let the dough rest 10 minutes.
  7. Scoop small portions, place on tray and flatten slightly.
  8. (Optional) Sprinkle with a little sugar.
  9. Bake for 14–17 minutes until the bottoms are lightly golden.
  10. Allow to cool slightly before serving.

  • Resting the dough makes it easier to shape and improves texture.
  • Use unsweetened cocoa powder for a mild chocolate flavour.
  • Chop walnuts fairly small so the biscuits hold together well.
  • For a slightly crisp top, sprinkle with sugar before baking.
