Ingredients
Method
- Preheat oven to 180°C and line a baking tray.
- Mix together egg, sugar, honey, oil and vanilla sugar.
- In another bowl mix flour, cocoa, baking powder and salt.
- Combine wet and dry ingredients to form a soft dough.
- Fold in raisins and walnuts.
- Let the dough rest 10 minutes.
- Scoop small portions, place on tray and flatten slightly.
- (Optional) Sprinkle with a little sugar.
- Bake for 14–17 minutes until the bottoms are lightly golden.
- Allow to cool slightly before serving.
Notes
- Resting the dough makes it easier to shape and improves texture.
- Use unsweetened cocoa powder for a mild chocolate flavour.
- Chop walnuts fairly small so the biscuits hold together well.
- For a slightly crisp top, sprinkle with sugar before baking.
