This is the kind of salsa I make when I want something fresh without any fuss. It’s chopped rather than blended, uses cherry tomatoes for their flavour, and comes together very quickly.
Why This Recipe Works
- Uses cherry tomatoes for natural sweetness and flavour.
- Chopped rather than blended for proper texture.
- No cooking required — just fresh, simple ingredients.
- Comes together in minutes, perfect for last-minute meals.
Ingredient Notes
- Cherry Tomatoes: Ripe, sweet tomatoes make all the difference here. If they’re out of season, leave them at room temperature for a day before using.
- Red Onion: Finely chop for balance. If you prefer a milder flavour, soak in cold water for 5–10 minutes before mixing.
- Lime: Freshly squeezed lime juice is essential — bottled won’t give the same taste.
- Coriander: Add just before serving for the freshest flavour.
How To Serve
- Perfect as a fresh side dish alongside chilli, fajitas or tacos.
- Spoon over grilled chicken or fish.
- Serve with gluten-free tortilla chips.
- Add to wraps, bowls or baked potatoes for extra freshness.
Storage
- Store in an airtight container in the fridge for up to 2 days.
- Stir before serving as the juices will naturally settle.

Chunky Tomato Salsa

Notes
- This is a quick, simple salsa that doesn’t use a blender.
- Cherry tomatoes work best here for their flavour.
