Chunky Tomato Salsa

This is the kind of salsa I make when I want something fresh without any fuss. It’s chopped rather than blended, uses cherry tomatoes for their flavour, and comes together very quickly.

Chunky Tomato Salsa

A quick, chunky tomato salsa made with cherry tomatoes, red onion, garlic, lime and coriander. No blender needed — just chop, mix and serve.

Ingredients
  

  • 400 g cherry tomatoes
  • 1/2 red onion finely chopped
  • 1 small garlic clove crushed
  • juice of 1 lime
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 25 g fresh coriander, stalks and leaves chopped
  • extra salt and freshly ground black pepper to taste

Method
 

  1. Quarter the cherry tomatoes and place them in a bowl.
  2. Finely chop the red onion and add it to the bowl.
  3. Add the crushed garlic, lime juice, oregano, salt and chopped coriander.
  4. Mix everything together well.
  5. Taste and adjust with extra salt and freshly ground black pepper if needed.
  6. Serve straight away.

Notes

  • This is a quick, simple salsa that doesn’t use a blender.
  • Cherry tomatoes work best here for their flavour.
  • Serve with gluten-free nachos, alongside chilli, or with other dips.
