Pan-Seared Salmon with Creamy Lemon & Dill Sauce

Pan-seared salmon served with a proper creamy lemon and dill sauce, kept thick and generous. A simple, reliable dinner that’s naturally gluten and lactose free and perfect with potatoes and vegetables.

Ingredients
  

For the Salmon
  • 4 s salmon fillets
  • 1 tbsp olive oil
  • salt and pepper
For the Creamy Lemon & Dill Sauce
  • 500 ml lactose-free cream
  • 1 garlic clove
  • zest 1 lemon
  • 2 tbsp fresh lemon juice (adjust to taste)
  • 2 tsp dried dill (adjust to taste)
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
To Serve
  • 1 kg potatoes
  • Steamed vegetables (such as broccoli, peas, green beans and carrots)

Method
 

  1. Pat the salmon fillets dry and season both sides with salt and pepper.
  2. Heat the olive oil in a large frying pan over medium-high heat.
  3. Add the salmon to the pan. If using skin-on fillets, place them skin-side down first. Cook for 3–4 minutes until lightly golden.
  4. Turn and cook for a further 2–3 minutes on the second side.
  5. Remove the salmon from the pan and set aside.
  6. Reduce the heat to medium. Add the minced garlic and cook for 30 seconds until fragrant, taking care not to brown it.
  7. Pour in the cream. Add the lemon zest, lemon juice, dried dill, salt and pepper.
  8. Allow the sauce to gently simmer for 6–8 minutes, stirring occasionally, until it thickens enough to coat the back of a spoon.
  9. Return the salmon to the pan. Spoon the sauce over the top and simmer gently for 2–4 minutes, until the salmon flakes easily and is just cooked through.
  10. Serve with boiled potatoes and steamed vegetables, spooning extra sauce where preferred.

Notes

  • The sauce should be thick and coating. If it reduces too much, loosen with 1–2 tablespoons of warm water.
  • This recipe works with both skinless and skin-on salmon fillets. If using skin-on, cook skin-side down first to help it crisp slightly before turning.
  • Lemon and dill can be adjusted to taste.
  • The salmon is cooked when it is opaque and flakes easily with a fork.
