I live on a small island on the west coast of Norway, where life moves with the seasons and the weather. The kitchen here is at the heart of our home.

My partner has been gluten and lactose intolerant for many years — long before I came into his life — so cooking this way was already part of his world. When we built our life together, it naturally became part of mine too.

At first, it was simply about learning what worked. What started as trial and error soon became something I genuinely enjoyed. I discovered that adapting everyday recipes didn’t mean sacrificing comfort or flavour. It meant understanding ingredients differently and using the alternatives available — even here in Norway, where options can sometimes feel limited — in a way that still produced food that was satisfying, balanced and full of flavour.

Over time, that process turned into a real passion. I love taking familiar, everyday meals and shaping them into versions that are just as comforting, reliable and flavour-packed — without gluten or lactose.

One thing matters deeply to me: in our home, we cook one meal for everyone. I don’t make separate dishes or “special” versions. When we have guests, I cook exactly the same way. Most people have no idea the meal is gluten and lactose free — they simply know it tastes good. That’s exactly how I want it.

I believe dietary needs should never mean compromise at the table.
